Description
A cold processed blend of fresh/frozen or dried fruit, sugar and carefully selected ingredients creating a freeze thaw and bake-stable pie and crumble filling preserving the natural goodness, flavour, colour and appearance of the fruit.

Applications
Elgar pie and crumble fillings can be used to create traditional baked pies & pudding desserts. The natural goodness and definition of the fruit are assured as the filling is only ever cooked once.
Product Options
Choose from old favourites such as Bramley apple, apple & blackberry, apple & blackcurrant, rhubarb, strawberry or mincemeat. Other products available include blueberry, cherry, summer fruits, winter fruits, lemon, apricot or raspberry (see Fruit Selector Chart for more ideas). Fruit content can be varied between 35% to 80% by mass dependant on your performance/price requirements. Wine or spirits can also be included in our fillings to create a more sophisticated adult or seasonal range of products such as luxury mincemeat with brandy or autumn fruits with mulled wine. Contact our technical department for samples and further information. We have the ability to develop both “organic” and “clean label” fruit preparations.


TECHNICAL INFORMATION
Shelf life
Our mincemeat has a shelf-life of 52 weeks pre-bake and 8 weeks post-bake at ambient temperatures. Meanwhile, our other products are supplied chilled with 8 weeks pre-bake shelf-life at 0ºC to 4ºC and up to 8 weeks post-bake shelf-life depending on the formulation.
